Zucchini, leek, and fennel soup
Recovering from a couple days of fever, I wanted to make a soup that I had all the ingredients on hand for, and would be easy on my stomach. After getting fennel last night, this recipe looked good: leek, zucchini, and fennel soup. I didn't have vegetable stock, so used water as the liquid, but the soup still cam out plenty flavorful, and very creamy considering the only ingredients were vegetables and water! Delicious as my first semi-solid food in four days.

Potato-zucchini latkes
Used regular all-purpose flour instead of potato flour, but other than that, followed this Whole Foods recipe exactly and got crisp, tasty little latkes. Delicious with sour cream...

Zucchini Bread
I'm headed away for the weekend again (Boston this time) and wanted to get a head start on using some of my box this week. The fruit and beans are good car snacks, and I thought I'd supplement that by turning the zucchinis into zucchini bread. I used the recipe from smitten kitchen and followed it to a T, using raisins and no nuts. Turned out great, two loaves-- one for work, one for the car.
