I'm headed away for the weekend again (Boston this time) and wanted to get a head start on using some of my box this week. The fruit and beans are good car snacks, and I thought I'd supplement that by turning the zucchinis into zucchini bread. I used
the recipe from smitten kitchen and followed it to a T, using raisins and no nuts. Turned out great, two loaves-- one for work, one for the car.
